Lemon Vinaigrette

Makes around ½ cup

½ teaspoon lemon zest
2 tablespoons lemon juice
1½ teaspoons white wine vinegar
5 tablespoons olive oil
1 garlic clove
salt
pepper

Let stand for a while so that the garlic infuses.
