Quinoa Salad


Salad

½ cup dried quinoa, cooked and cooled
½ English cucumber, diced
½ red bell pepper, diced
1-2 large handfuls of greens
  spinach, bok choy, arugula, microgreens

More veggies
  grated carrot, broccoli stems
Chopped parsley, cilantro, basil, mint, or dill
Seeds or nuts \
  sunflower seeds, walnuts, pine nuts, or pepitas
Dried fruit
  blueberries, cranberries…

Dressing

1:1 ratio olive oil to apple cider vinegar
Dijon mustard
Honey or maple syrup
Salt to taste
Black pepper
Lemon or lime juice

  • Cook the quinoa. Rinse, then use a 2:1 ratio water to quinoa. Bring to a boil, reduce to a simmer, and cook 10 minutes. Let rest for 5 minutes, then chill in the fridge.
  • Toss it all together.
