½ cup dried quinoa, cooked and cooled
½ English cucumber, diced
½ red bell pepper, diced
1-2 large handfuls of greens
spinach, bok choy, arugula, microgreens

1:1 ratio olive oil to apple cider vinegar
Dijon mustard
Honey or maple syrup
Salt to taste

- Cook the quinoa. Rinse, then use a 2:1 ratio water to quinoa. Bring to a boil, reduce to a simmer, and cook 10 minutes. Let rest for 5 minutes, then chill in the fridge.
- Toss it all together.
